Great question – and one that opens up a “regulatory can of worms.” We have to put soy on the label, because nattokinase, a proteolytic (protein dissolving) enzyme, is fermented from soy. So, even though it is extracted from the soy as a separate enzyme, we still have to disclose any allergens. Ultimately the disclosure of allergens is a very good regulation (one of our staff has a milk allergy and depends on it himself. However, it also can get confusing in the case of nattokinase and soy. An analogy would be growing probiotics from milk- where companies notify the customer since milk is an allergen.)
